I've recently decided to study up on the lastest findings for a Plant-based diet, so I'm studying with eCornell on this subject. It is written by Dr T. Colin Campbell, M.D. who wrote The China Study . So far it is absolutely fascinating the findings his research has established. Of course, I'm not so interested in the research as in the findings and application of said findings.
Having put rather a few pounds on this winter with the addition of what I consider processed foods, i.e. bread, wraps and tortillas (corn as well as wheat), I've come to the conclusion that I need to stay away from such things.
I suspect that I have a little insulin resistance, and when grains are broken down it is well known that they trigger the insulin response to secrete more insulin to deal with these products, and thus any excess is stored as fat, as the insulin cannot break these substances down. This is the basis of Type II diabetes (which I don't have BTW). So I've cut them out and am sticking with whole grains and seed grains like Millet, Quinoa, with occasional forays into rice. My carbs are now more vegetable based. And the extra weight IS coming off pretty rapidly actually.
So lots of salads, and vegetable soups and stews and casseroles with small amounts of grains and seed-grains.
