Cooking without Oil
One of the new concepts that gets introduced into this new way of using plants as nutrition is to eliminate the use of oil and fat for cooking. Yes, we need fat in the diet, but that is quite easy to get without using refined oils or fats.
So what do you use when you want to brown or soften onions, garlic, etc? You use some sort of liquid. Water tends to be my first choice because it is so readily available (and thank heavens for that!). But you can use wine, juice (like orange, tomato or apple), stock, potato cooking water, water from steamed vegetables. I'm sure you can think of a few other things to use. Get creative.
